Rhubarb Greek Yogurt Fool


Ingredients

450g Rhubarb
3 tbsp Rachel’s Organic Greek Yogurt
1 tbsp light brown sugar
juice of 1 orange

Directions
------------

1) Wash and cut the rhubarb into small chunks, add to a pan with the sugar, orange juice and 3 tablespoons of water. Heat over a low heat until the rhubarb has broken down. Remove from the heat a leave to cool.

2) To serve, reserve a little of the rhubarb, mix the rest with the Greek yogurt and pour into serving bowls and top with the rest of the rhubarb.
